Ingredients
- 1 lb / 450 g ground beef
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 medium zucchini, in half-moons
- 2 cloves garlic, sliced
- 1 tbsp tomato paste
- 2 tsp smoked paprika
- 1 tsp dried thyme
- 1 can (14 oz / 400 g) chopped tomatoes
- 5 cups / 1.25 l beef stock
- 1 tbsp apple cider vinegar
- salt and black pepper
Method
- Brown the beef hard in the oil — leave it untouched 2 minutes before breaking it up. It should catch real colour.
- Add onion, carrots and celery; soften 5 minutes.
- Stir in garlic, paprika, thyme and tomato paste for one minute.
- Add tomatoes and stock. Simmer 15 minutes, then add the zucchini for 5 more.
- Finish with the vinegar; taste and season properly — tomato broths take more salt than expected.
Worth knowing. Freezes for three months; day two is better than day one.
