Ingredients
- 2 lb / 900 g ground turkey
- 1 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, diced
- 3 cloves garlic, chopped
- 2 tbsp chili powder
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 can (14 oz / 400 g) chopped tomatoes
- 2 tbsp tomato paste
- 2 cans (15 oz / 400 g) black or kidney beans, drained
- 1 cup / 250 ml chicken stock
- salt; lime, cilantro and sliced scallions to serve
Method
- Brown the turkey in the oil in a hot skillet, breaking it up, 6–7 minutes. Do not skip this — unbrowned turkey makes grey chili.
- Scrape it into the slow cooker with the onion, pepper, garlic, spices, tomatoes, paste, beans and stock.
- Low for 6 hours (or high for 3). Stir once if you are around; it does not mind if you are not.
- Taste and salt properly. Serve with lime, cilantro and scallions.
Worth knowing. Freezes for three months and is better the next day — make the full pot.
