Cumin Lamb Chops with Roast Carrots and Mint Sauce

Method

  1. Heat the oven to 425°F / 220°C. Toss the carrots with 2 tbsp oil, half the cumin and salt; roast 25 minutes until browned and bendy.
  2. Meanwhile stir the chopped herbs with the lemon juice, garlic, 1 tbsp oil and a pinch of salt — a rough, spoonable sauce.
  3. Rub the chops with the last of the oil, the remaining spices, salt and pepper.
  4. Sear in a screaming-hot pan, 3–4 minutes a side for pink. Rest five minutes.
  5. Plate the carrots, chops on top, herb sauce over everything.
Worth knowing. The herb sauce keeps three days and is just as good on chicken or roasted squash.
