Ingredients
- 2 cans (5 oz / 140 g each) tuna in olive oil, drained
- 1 can (15 oz / 400 g) cannellini beans, drained and rinsed
- ¼ red onion, very thinly sliced
- 2 stalks celery, thinly sliced
- 3 tbsp olive oil
- juice and zest of 1 lemon
- big handful parsley, chopped
- salt, black pepper, chili flakes
Method
- Soak the sliced onion in cold water for 5 minutes — it takes the aggression out.
- Whisk the oil, lemon juice, zest, salt and pepper in the bottom of a big bowl.
- Fold in the beans, then the tuna in big flakes — do not mash it into paste. Add celery, drained onion and parsley.
- Chili flakes if you like. It improves after ten minutes of sitting.
Worth knowing. Keeps two days in the fridge — wake it up with a fresh squeeze of lemon before eating.
