Ingredients
- 2 cans (15 oz / 400 g each) chickpeas, drained
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp garlic powder (optional)
- ¾ tsp salt
Method
- Heat the oven to 400°F / 200°C. Dry the chickpeas hard between tea towels — rub until the loose skins come off.
- Toss with the oil and salt only, and spread on a large tray with space between them.
- Roast 35–40 minutes, shaking the tray twice, until deep gold and audibly crunchy.
- Toss with the spices while hot — spices added before roasting burn.
- Cool completely on the tray; they crisp further as they cool.
Worth knowing. A loosely covered jar keeps them crunchy for three days — a sealed container turns them chewy by morning.
