Ingredients
- 1 cup / 175 g soft Medjool dates, pitted
- 1 cup / 100 g walnuts
- ½ cup / 70 g almonds
- 3 tbsp unsweetened cocoa powder
- 1 tbsp chia seeds
- pinch of flaky salt
- 2–3 tsp water, only if needed
- shredded coconut for rolling (optional)
Method
- Blitz the walnuts and almonds in a food processor to coarse crumbs.
- Add the dates, cocoa, chia and salt; run until the mixture clumps and holds when pinched. Add water a teaspoon at a time if it stays sandy.
- Roll into walnut-sized balls; roll half of them in coconut if you like the contrast.
- Firm up in the fridge 20 minutes if you can wait that long.
