  1. Warm the oil; soften carrots (and celery) 5 minutes without browning.
  2. Add stock, ginger and whole chicken thighs. Simmer 20 minutes.
  3. Lift out the chicken; add the rice to the pot for 12 minutes.
  4. Shred the chicken, return it, and fish out the ginger slices.
  5. Finish with lemon, herbs, and more salt than you think.
Worth knowing. Rice keeps drinking the broth overnight — add a splash of water when reheating.
