  1. Start the sweet potatoes in 2 tbsp oil, lid on, stirring now and then, 10–12 minutes until nearly tender.
  2. Push aside; brown the turkey in the space with the spices, 6–7 minutes.
  3. Add the pepper for 3 minutes; fold everything together with the spinach until it wilts.
  4. Season hard. Top with fried eggs if you like.
Worth knowing. Boxes up for three lunches; the hash freezes, the egg does not.
