  1. Start the rice. Whisk the tamari, vinegar, sesame oil, maple and ginger into a dressing.
  2. Pat the tofu cubes truly dry — dry tofu browns, wet tofu steams.
  3. Sear the tofu in the neutral oil over medium-high, turning now and then, 8–10 minutes until golden on most sides.
  4. Meanwhile steam the broccoli 4–5 minutes, until bright green and just tender.
  5. Build the bowls: rice, broccoli, tofu. Spoon the dressing over everything and finish with sesame seeds.
Worth knowing. The dressing keeps a week in a jar — double it and the next bowl takes ten minutes.
