Ingredients
- 4 oz / 110 g hot-smoked salmon, flaked
- 1 ripe avocado, sliced
- 2 eggs
- ½ cucumber, thickly sliced
- 1 tbsp olive oil
- squeeze of lemon
- salt, pepper, chili flakes if you like
Method
- Boil the eggs 7 minutes; cool under cold water and peel.
- Arrange salmon, avocado, cucumber and halved eggs on a plate.
- Dress with oil, lemon, salt and pepper.
