Peanut Noodles with Edamame and Cucumber

Cool noodles and edamame tangled in a savory-sweet peanut sauce, topped with cucumber and crushed peanuts. Twenty minutes, and most of that is the noodle water coming to a boil.

  • Edamame are whole young soybeans, a complete plant protein.
  • Peanut butter brings plant protein and unsaturated fats.
  • Cucumber and scallions keep it crisp against the rich sauce.

Ingredients

Method

  1. Cook the noodles; drop the edamame into the same pot for the last 2 minutes. Drain and rinse briefly under cool water.
  2. Whisk peanut butter, soy sauce, vinegar, maple syrup, sesame oil and garlic; thin with hot water, a spoonful at a time, until it pours like heavy cream.
  3. Toss the noodles and edamame with the sauce.
  4. Top with cucumber, scallions, crushed peanuts, and chili crisp if you like.
Worth knowing. The sauce sets in the fridge — a splash of hot water and a good toss brings leftovers back.
