Ingredients
- 4 tbsp olive oil, plus more to finish
- 1 onion, finely chopped
- 3 cloves garlic, sliced
- 1 can (14 oz / 400 g) chopped tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- pinch of cinnamon
- 3 cans (15 oz / 400 g each) butter beans, drained
- big bunch fresh dill, chopped
- 1 tsp red wine vinegar
- salt and black pepper
Method
- Heat the oven to 400°F / 200°C. In an ovenproof skillet, soften the onion in the oil, 5 minutes; add garlic for the last minute.
- Add tomatoes, tomato paste, oregano, cinnamon and a splash of water. Simmer 5 minutes into a loose sauce; season.
- Fold in the beans and most of the dill.
- Bake 25 minutes, until bubbling and caramelized at the edges.
- Finish with the vinegar, the rest of the dill and a generous pour of olive oil.
Worth knowing. Keeps four days and tastes better on day two; eat warm or at room temperature, the Greek way.
